The Journey From Farm to Cup Doesn’t End at Roasting- At Brazilian Highlands Brew, we believe that every coffee moment should be rich, fresh, and true to its origin. To ensure this, we not only select high-quality beans but also educate our customers on the best practices for storage and preparation.

Once roasted, coffee beans still retain their natural oils and aromatic compounds — the essence of their unique flavor and aroma. However, when exposed to air, a natural process called oxidation begins, which gradually diminishes the coffee’s character.

The effects of oxidation:  Reduced aroma intensity. Muted, flat, and less vibrant flavor profile. Accelerated aging, resulting in a lifeless cup.

When whole beans are ground, the surface area exposed to oxygen increases exponentially, which speeds up the loss of volatile aromatic compounds and essential oils.

Time makes all the difference:
  Within 30 minutes: noticeable aroma loss.
After a few hours: flavors start to flatten.
After a few days: the coffee loses most of its freshness and complexity.

For best results: Always grind your coffee moments before brewing to capture its full sensory potential.
